The tablist name is as easy as
set the player's tablist name to "namehere"
setting the overhead name requires an addon I believe, can't recall it off the top of my head
**Edit: It's umbaska and requires the plugin nametagedit

You can change the player's nametag (above head name) with MundoSK & ProtocolLib, Skellett if you want change nametag prefix/suffix.
