For weight saving, I want to erase all the Variables of players who have not logged in for a month.

Is there a way to erase all Variables associated with %player('s uuid)% ?

Matters how you stored the variables.
If you stored them like this:
code_language.skript: 
set {uuidslastlogin::%player's uuid%} to now
It could easily be done
