Is there a way to change the boss bar color?

no, you can only do this by changing the resource pack or with a mod.

Yep, you'll need to be on 1.9 or above and you need SkAction:
code_language.skript: 
send bossbar "Hello" with color "RED" with barflag "PLAY_BOSS_MUSIC" with barstyle "SEGMENTED_10" with percent 100 to player

I havent tested this, i just took it off the docs.

I would use Skellett or skRayFall such as skAction isn't being updated anymore.
