on leftclick:
    if clicked block = red stained clay:
        execute console command "eco give %player% 10"

whenever i put this on my sever, if they click any type of clay they get money, not just red stained clay but any colored clay

Uhh isnt it red hardened clay instead of stained clay?
Maybe try

on leftclick:
    if the clicked block is red hardened clay:
        make console execute command "eco give %player% 10

But im not sure with that block..

This works for me:

on left click on red stained hardened clay:
    execute console command "eco give %player% 10"
