Does the "delete {variable.%player%}" remove the variable value or does it remove it from the variables.csv file?

What I want to do is to remove the variable completely from this file, but it's not working, because it stays there, so I suppose it isn't the correct syntax? can someone help me please?

it deletes the variable and you would not see it change in the file until your server is stopped or restarted because the changes are stored in memory and are saved into the file upon shutdown as far as I understand
