Is it possible to make a script that allows players to drag and drop banners in the helmet slot? If yes, how?

            set event-slot to cursor

Where did you get that slot number from?

That is the slot number for the helmet, 5. I got it from SpigotMC

Try replacing "cursor" with "cursor slot", and if that doesn't work, try "cursor slot of player"

Give this a shot, all this requires is the skript plugin.

        if cursor slot of player is banner:
            set helmet of player to cursor slot of player
